General Comments
On January 13, 2012 this facility sustained a fire in the deep fryers. The general area sustained smoke damage and chemical residue from the fire extinguisher. All food that was discarded was documented and attached to report. All single service items were discarded; all containers not opened was wiped down with Quat sanitizer at 50-100 ppm.

Before re-opening facility must do the following:
1) thoroughly clean with a sanitizer 50-100 ppm all counters, equipment, any non-opened containers, bottles etc.
2) thoroughly clean walls, ceiling and floor in fire area,
3) sanitize all nozzles, coffee/beverage machines, etc.
4) empty ice bins and sanitize before placing ice in bin,
5) thoroughly clean hooded duct over deep fryers.

Once facility has thoroughly cleaned facility, please call the Health Department for a re-inspection.

Note: ancillary system must be tested and approved by the Kankakee Fire Marshall before use.
